Executive Chef, Stephen Window British-born Stephen B. Window attended culinary school near his hometown of Manchester, England and embarked on a career that would take him to acclaimed restaurants around the world. His extensive travels give him an impressive expertise in many diverse cuisines—from the cooking of exotic Pacific islands to the classic recipes of Escoffier—all of which are embodied in his kitchen at Roppongi. In 1998, Window joined the Ladeki Restaurant Group and helped to open Roppongi, where his love of classic culinary traditions and his appreciation for the diverse flavors of the Pacific have been allowed to flourish. Since opening, Roppongi has won many awards and Window has received top honors, including the Institute of the Americas’ Chef of the Year (2001) and Critics’ Choice for Best Chef of 2003 by San Diego Magazine. Window has also twice served as a featured chef at the James Beard House. |

Sushi Chef, Warren Almeda Chef Warren Almeda brings to Roppongi his many years of experience from all across the Asian-influenced spectrum. Trained at the California Culinary Academy in San Diego, Almeda earned his Culinary Arts degree at Le Cordon Bleu and solidified his out-of-the-box sushi style during tenures in Las Vegas and Los Angeles. Believing that sushi is a meticulous art, Almeda’s aim is to have each dish carry his signature technique and contemporary flavor from prep to palate. His distinctive blend of sushi tradition with hand-selected unique ingredients has helped re-establish Roppongi as a dining destination for cutting-edge sushi cuisine. |
